Chicken Lesbian

Servings: 2-4, depending on chicken portions
Preparation Time: 20 minutes

Recipe Ingredients

2 Chicken breasts, pounded thin
1 tsbp Butter
1 cup Mushrooms, sliced
Just a little garlic
Maybe some shallots or red onion: 1/2 cup
Harvey's Bristol Cream Sherry (Do not substitute)
One packet chicken boullion
Freshly ground black pepper to taste


Recipe Directions

Melt butter over medium heat. When bubbly,  add in chicken. Let brown slightly, but the chicken cooks quickly. Do not let butter burn. Once chicken is basically cooked (a few minutes), remove chicken and add shallots/onions, garlic, and mushrooms. Stir together to distribute butter, and cook until the mushrooms are slightly browned on the edges, and the onions are cooked through. You may have to add some of the sherry to keep these items from sticking. Add the rest of (at least) a half cup of the Cream Sherry. The aroma will be incredible. :-) Add the chicken boullion packet. Stir to distribute.

Allow the mixture to cook down to a sauce-like consistency. Add the parsley and black pepper to taste. If it doesn't thicken in the time you prefer, you can thicken with a little cornstarch mixed with a little water or chicken broth. Return chicken to the pan to heat up. Garnish with additional parsley, and serve immediately over egg noodles. Yummy.
